Chocobos
Large bird creatures that can be used as a mount. In order to find one, you must use a lure. It is a good idea to look for them around where their tracks are found. They will normally be found with an escort of wild animals that would love to take a bite out of you, so come armed. They are easily spooked by use of materia, so remove any active materia and avoid the use of spells.
Breeds:
Normal (Yellow)
Range from Weak to Wonderful. Their class is easily identified by a seasoned chocobo rancher.
Mountain (Green)
Green feathers. Able to cross mountains.
River (Blue)
Blue feathers. Able to cross shallow bodies of water.
Mountain and River (Black)
Black feathers. Able to cross mountains as well as shallow bodies of water.
Gold
Gold feathers. Able to cross any terrain.
Through use of greens and training, chocobos can become smarter and faster.
Greens (in order from worst to best):
Gysahl (raise stamina)
Krakka (raise intellect)
Tantal (raise speed intellect and stamina)
Pahsana (raise intellect)
Curiel (raise speed and stamina)
Mimett (raise speed and stamina)
Reagen (raise speed and stamina)
Sylkis (raise speed intellect and stamina)
To train your chocobo, take them to the Golden Saucer's Chocobo Square. They will start out in the C class. They can move up to the B, A, and S classes by winning races. The greens you have fed your chocobo will determine its performance on the track. Without a boost to his speed, it will fall behind at a normal pace. Without intellect, it will fight the jockey for control. Without stamina, it will tire quickly, especially when it is dashing.
Breeding chocobos is a science. The best way to go about it is to feed and train the best S class birds you can and feed them the best nut you can find. You must feed your chocobos a nut in order for them to breed. Let them rip into the entire bag and you will run out of stalls in a hurry.

Pepio
Luchile
Saraha
Lasan
Pram
Porov
Carob
Zeio
Breeding the chocobo you want:
Mountain (Green) or River (Blue) - Capture a Good and a Great of either gender and max out their stats with Sylkis greens. Race them until they both reach S class and give them a Carob nut. You will get one or the other. If you breed the special chocobo with whichever parent is the other gender, you have a greater chance of getting the other type.
Mountain and River (Black) - Max out the stats of your Mountain and River chocobos with Sylkis greens. Race them until they are both S class, and give them a Carob nut.
Gold - Capture a Wonderful chocobo. Max out it and the Mountain and River chocobo's stats with Sylkis greens. Race both of them until they are S class. Give them a Zeio nut.
